The Tasty Veggie Option
is a deep-fried ball or patty made from ground chickpeas, fava beans, or both. Falafel is a traditional Middle Eastern food, commonly served in a pita, which acts as a pocket, or wrapped in a flatbread known as taboon; "falafel" also frequently refers to a wrapped sandwich that is prepared in this way. The falafel balls are topped with salads, pickled vegetables, hot sauce, and drizzled with tahini-based sauces. Falafel balls may also be eaten alone as a snack or served as part of a meze tray (assortment of appetizers).
Falafel is a common dish eaten throughout the Middle East. The fritters are now found around the world as a replacement for meat and as a form of street food.
Simpicity in flavour!
How To Make Hummus
Serves 6-8 as a starter
2 x 400g cans of chickpeas
4 tsp tahini
2 garlic cloves, crushed
1 tsp crushed sea salt
6 tbsp quality extra virgin olive oil
3½ tbsp freshly squeezed lemon juice
Coriander or parsley leaves (optional)
Rinse the chickpeas in cold water and tip into the food processor. Add the tahini, crushed garlic, salt, lemon juice and seven tablespoons of the reserved liquid from the cans. Turn on the food processor and slowly pour in the oil while it runs.
When the mixture is fully combined and smooth, tip it into a serving dish.
What is Tahini
An irresistible taste
Tahini also known as Ardeh is a condiment made from toasted ground hulled sesame seeds. Tahini is used in Armenian, Bulgarian, Greek, Cypriot, Iranian, Iraqi, Kurdish, Lebanese, Levantine, North African, Israeli, Palestinian, Syrian and Turkish cuisines. Tahini is served as a dip on its own or as a major component of hummus, baba ghanoush, and halva. It is also widely used in Chinese and South East Asian cuisine, notably Vietnamese cuisine.
